Lemon Melting Moments


Difficulty Level: Intermediate


Ingredients
¦FOR COOKIES:
¦1 cup butter, at room temperature
¦1/3 cup sifted powdered sugar
¦1 1/4 cups flour
¦1/2 cup cornstarch
¦FOR LEMON FROSTING:
¦1/4 cup butter, at room temperature
¦1 1/2 cups sifted powdered sugar
¦2 tablespoons lemon juice
¦1 tablespoon grated lemon rind


Directions
1.For the cookies: Preheat oven to 350 degrees.
2.Cream butter;
add powdered sugar and beat well.
Gradually add flour and cornstarch, beating until smooth.

Drop by teaspoonfuls onto ungreased baking sheets. (Editor's Note: I like to divide dough in half and shape each half into an 8-by-1 inch roll. Wrap in plastic wrap and refrigerate until firm, at least 2 hours. Slice and place on ungreased baking sheets.)

Bake until done, 8-12 minutes.
Cookies will not brown on top. Cool slightly on cookie sheet; remove to wire racks to cool completely.
Frost with Lemon Frosting.

3.For the Lemon Frosting: Cream butter. Gradually add powdered sugar and lemon juice, beating until smooth. Stir in grated lemon rind. Use to frost cooled cookies.

4.Note: If desired, use a pastry bag with a star tip to form the cookies and frosting.

Makes 5 dozen cookies, each 60 calories (55.9 percent calories from fat), 4 g fat, 10 mg cholesterol, 0 mg sodium, 10 g carbohydrates, 0 g dietary fiber, 0 g protein.

I've seen a lot of Melting Moments recipes but have never tried them.

This was a nice little write-up about the late chef. I haven't tried them but they look wonderful

I've been told they are similar to Russian Tea Cookies.

Dunno. And since the article and recipe were posted in honor of the originator's death, we can't ask!

Probably means they melt in your mouth.

I left lemons off my shopping list for today and I would never think of using bottled lemon juice for a cookie or cake.

Minute Maid has a frozen lemon juice in a bottle. It is pure lemon juice, and is every bit as good as fresh. I keep some on hand at all times.

Yes, a plastic bottle. I find it here with the frozen orange juice and other juice concentrates. The bottle is yellow, of course.  They also have fresh lime juice, but it's harder to find.
