   It's still a fine time of year to find good apples and add some apple dishes to our menus.  If you haven't seen them, there are some more apple recipes in the forum's library Files  and some additional recipes for easy apple dishes below. 

   If you have a favorite apple recipe -- or a request for an apple recipe, please be sure to post a note!

Microwaved Baked Apple

1. Cut apple in half around the middle, remove seeds and core.
2. Sprinkle white and brown sugar or sugar substitute on the apple halves.
3. Dab 1/4 tsp butter on each apple half.
4. Close the apple.
5. Place in  microwave on high for about 90 seconds.  Let cool before eating.

Apple Pancake

1 large cooking apple
1/2 cup skim milk
1/2 cup flour
3 medium eggs, beaten
1 tsp sugar (used for browning)
(dash of salt -- optional)
2 Tblsp margarine or butter
2 tsp lemon juice
1 tsp ground cinnamon
artificial sweetener equal to 1/4 cup of sugar 

1. Preheat oven to 400F (205C). 
2. In small bowl, mix together the cinnamon and artificial sweetener.  Set aside.
3. Core apple and cut into thin (1/8th inch) slices.
4. In small bowl, beat the 3 eggs.
5. In medium bowl, combine the milk, flour, eggs, sugar, and salt, mixing until smooth, but not beating the batter.
6. Using an oven-safe 10" skillet, melt the butter in the skillet, then sute the apples slightly.   (Be sure the skillet handle is safe for use in an oven.)
7. Pour the batter over the apples in the skillet and bake for approx.10 minutes or until the pancake is puffy and nearly cooked.
8. Sprinkle the top of the pancake with the cinnamon-sweetener mixture and dot with 1 Tblsp butter or margarine, then briefly return the pancake to the oven to finish browning.   
9. Before serving, sprinkle with lemon juice. Cut pancake into quarters to serve.

Makes 4 servings, each about 219 calories, 25 g carb, 7 g protein, 10 g fat, 160 mg sodium OR 1 Starch/Bread plus 1 Fruit plus 1 high-fat Meat Exchange.

Apple-Stuffed Squash

2 acorn, buttercup or butternut squash
2 large tart apples, cored and sliced
1/2 onion, chopped
1 tsp sugar
2 tsp low-fat margarine
cinnamon
pepper
nonstick cooking spray

1. Preheat oven to 350F.  Spray shallow cooking dish with nonstick cooking spray.
2. Split squash in half, scoop out seeds and place cut-side down in the prepared shallow baking dish.  Pour hot water into the dish to a depth of 1/2 inch.  Bake until partly tender or about 20 min for butternut and  buttercup squash or 30-45 min for acorn squash.
3. Briefly remove from oven, turn the squash cut-side up, and fill each segment of squash with 1/4 of the apple slices and some onion.  Sprinkle with cinnamon and pepper to taste, then sprinkle 1/4 tsp of sugar on top of each squash half and dot with margarine.
4. If necessary, add enough hot water to bring the depth of water back up to 1/2 inch and return the squash to the oven to bake for another 20-30 minutes or until the squash and apples are tender. 

  Makes 4 servings, with each serving about 166 calories, 41 g carb, 2 g protein, 1.5 g fat, 30 mg sodium, 6 g fiber OR 1 Fruit and 3.5 Vegetable Exchanges.

Apple Cobbler

4 medium apples
1 and 1/2  Tblsp lemon juice
1/2 tsp grated lemon rind
1 Tblsp cornstarch
1 tsp apple pie spice  (a cinnamon-nutmeg mixture)
  artificial sweetener equal to 12 tsp sugar
1/4 tsp salt
  1/2 cup flour
  3 Tblsp butter or margarine
  nonstick cooking spray

1. Preheat oven to 425F (218C).  Spray inside of a 9" pie plate with nonstick cooking spray.
2. Pare apples, remove cores, and cut apples into 1/8th inch thick slices.  This should yield about 4 cups.
3. In a bowl, combine apple slices with lemon juice and lemon rind.
4. In a separate small bowl, combine cornstarch , spice, 1/8th tsp salt, and artificial sweetener, mixing thoroughly.
5. Add cornstarch mixture to the apples, stirring lightly with a fork to coat the apple slices evenly.
6. Place the apples in the pie pan, spreading them evenly.  Set aside.
7. In a small bowl, mix together 1/8th tsp salt and the 1/2 cup flour.  Use a fork or pastry blender to cut in the margarine or butter until the texture is crumbly.  Scatter the mixture over the top of the apples.
8. Bake the apples for about 35 minutes or until the top is golden brown.

Makes about 8 servings, with each serving about 106 calories, 16 g carb, 1 g protein, 5 g fat, 87 mg sodium OR 1 Starch/Bread exchange Plus 1 fat exchange.

Caramel Dip for Apple Slices

1 (4-serving) pkg sugar-free vanilla cook'n serve pudding mix
1 (4-serving) pkg sugar-free lemon gelatin mix
1/4 cup brown Sugar-Twin
1 tsp apple pie spice 
1 and 1/4 cups water
1 tsp vanilla extract
1 (8 oz)  oz pkg fat-free cream cheese
1/4 cup (1 oz) finely-chopped roasted peanuts
 
1. In medium saucepan, combine pudding mix, gelatin mix, sugar substitute, apple pie spice and water.  Stirring constantly, cook over medium heat until mixture thickens and starts to boil.  Remove from heat.
2. Stir in vanilla extract and place saucepan on wire rack to cool for 5 minutes.
3. In medium bowl, stir cream cheese until its soft.  Add chopped nuts, mixing well.  Stir into the slightly cooled pudding mixture.
4. Refrigerate for at least 1 hr and gently stir once just before serving with apple slices.

Makes 8 (1/4 cup) servings of dip, each about 62 calories, 5 g carb, 6 g protein, 2 g fat, 271 mg sodium OR 1 Meat exchange.   (Nutrition count does not include the apples.)

     or 2/3 cups Equal® SpoonfulTM
2   Tablespoons strawberry spreadable fruit
1   egg, beaten
1   teaspoon vanilla
1/4   cup skim milk
1   cup self-rising flour
1   medium Granny Smith apple
2   teaspoons lemon juice
1/2   teaspoon cinnamon
1/4   teaspoon Equal® for RecipiesTM or 1 packets Equal® sweetener or
      2 teaspoons Equal® SpoonfulTM

If you have a favorite apple recipe

This isn't a recipe ... more a suggestion.  Add diced apple (a crisp variety, such as Fuji) to tuna salad, along with some nuts such as pecans or walnuts.  The crunch and flavor do wonders to lift tuna salad out of the ho-hum pits.

Dear Dot,

      What a great idea!  I've been enjoying bits of apple tossed in salad lately, but hadn't ever considered adding it to tuna.  I imagine it might be a nice addition with other fish, too!

Hmm ...  You're giving me ideas, Paula.  I wonder how it would work to place thin slices of apple under fish fillets before broiling.
